Our award winning restaurant showcases California coastal cuisine using sustainable seafood, Angus beef, and local organic produce.
Located at the upscale InterContinental The Clement Monterey hotel on Monterey Bay. Every table at the C restaurant has a view of the pristine and scenic Monterey Bay, and features only seafood endorsed by Seafood Watch of the Monterey Bay Aquarium. Local produce and Angus beef are also featured. The delicious Arctic Char featured on Executive Chef Matt Bolton's menus is similar to salmon in taste, texture and color, but is available year-round, and is rated a "best choice" by Seafood Watch. Enjoy the parade of sea creatures and shore birds as you savor the finest in California regional cuisine. Marine life sightings abound, including dolphins, whales, harbor seals and sea otters. Our family-friendly Monterey Bay restaurant is close to the Aquarium, situated over sapphire waters and immersed in the natural beauty of the California coast. Our bar closes at 11pm during the week (an hour after dinner service) and midnight on weekends! Happy Hour is Sun-Thurs 4-7pm. Live Music Thurs-Sat!

Yesterday, Chef Matt Bolton and his team were pleased to once again be a part of the Culinary Classique d'Elegance, an annual event hosted by Meals on Wheels of the Monterey Peninsula. Chef Bolton's menu included: Baby Beet Salad: frisée, satsuma mandarin, humbolt fog, caramelized walnut, dijon vinaigrette. King Salmon: pan seared, porcini, parsnip, bloomsdale spinach, truffle emulsion. Blood Orange Granita with candied fennel. Filet Mignon: prime beef, applewood smoked, foie gras bread pudding, chanterelle purée, candied turnip, sauce bordelaise. Epoisse, p’tit Basque, Manchego with marcona almond, fig chutney, honeycomb, walnut fig bread (Fromage course). and for dessert, Coffee Zephyr Caramel Custard: ginger cake, brown butter pears, hazelnut crunch #yum! Starting today, we’re celebrating #NationalIceCreamMonth with Ice Cream Sundays at the C! Every Sunday this month, our Sous Chef Michelle will offer a different ice cream dessert special in celebration of summer. She got things going on Friday with a trip to the Monterey Farmers Market at Monterey Peninsula College. Inspired by what she saw, she's whipping up a Lemon Verbena ice cream with Snobrite peaches from Kashiwase Farms and blackberries from Prevedelli Farms, served with a crisp yeast waffle, a favorite of Chef Michelle’s.
